Food safety, Hazard Analysis and Critical Control Point and the increase in foodborne diseases: a paradox?

This paper presents reasons for the increase in foodborne disease, the potential of the HACCP system in preventing foodborne illnesses, the determinants of its success and failure, and the contribution which can reasonably be expected from the implementation of the HACCP system to public health. One suggestion is that public health authorities promote food safety among consumers, so that they adopt safe food handling practices in their homes. Food Control 1999;10:325-333.
